You will need:

  • 2 cans of black beans
  • 1 brown onion (diced)
  • Sliced mushrooms
  • 1 Capsicum (diced)
  • 1 zucchini (diced)
  • 1 can diced tomatoes
  • 1 packet taco seasoning

Method

  1. Cook diced onion until softened, add in vegetables until soft.
  2. Add diced tomatoes, black beans & taco seasoning.
  3. Sauté for 10 minutes and serve with burritos, taco shells, and your favourite toppings (avocado, sour cream, spinach, tomatoes, cheese!)
