You will need:
- 2 cans of black beans
- 1 brown onion (diced)
- Sliced mushrooms
- 1 Capsicum (diced)
- 1 zucchini (diced)
- 1 can diced tomatoes
- 1 packet taco seasoning
- Cook diced onion until softened, add in vegetables until soft.
- Add diced tomatoes, black beans & taco seasoning.
- Sauté for 10 minutes and serve with burritos, taco shells, and your favourite toppings (avocado, sour cream, spinach, tomatoes, cheese!)
